Weekend Brunch
Brunch at The George kicks off with a delightful surprise from our scone cart, offering house-made scones with lemon curd, Devonshire cream, and jams. Customize your mimosa, select a small course, and explore a diverse main menu with dishes like S’mores French Toast, Burrata Salad, Lobster Benedict, and the hearty Olympic Smash Burger. Join us on Saturdays and Sundays from 12pm to 3pm.

Nick’s culinary passion ignited early in his career. As a Level 2 Sommelier with experience in 5-star hotels and award-winning restaurants, he now manages the beverage program for four brands at Fairmont Olympic. He and his mixology team craft seasonal cocktails and host intimate Founders Club events, with drinks inspired by Seattle’s local flavor.
